pumpkin pancakes

I'm always looking for new food ideas for Isaac. He has always been a good eater, but I know that may change in the next year or so, as most toddlers go through a picky phase. We seem to be stuck in a breakfast rut. Almost every morning he eats a blueberry waffle and a banana. I have made pancakes in the past and frozen them so I could just reheat, but I'm not the best pancake maker. I tend to burn them, and of course I make a huge mess.

When I found a recipe for pumpkin pancakes on Pinterest, I thought I would give it another go.







Isaac wouldn't touch them.

I was so upset. I thought they were really good, but he wouldn't even put it in his mouth. I'm not sure if he was expecting his normal waffle, but he would only pick it up and drop it. The rest of the batch went into the freezer, and we tried again the next day. He picked them up and ate them like it was what he did every day. Silly boy.

If you like a good pumpkin recipe in the fall, give these a try. I did not make the cinnamon syrup to go with them, but I'm sure it would compliment the pancakes well.

Must try these! They look sooo good! I love anything pumpkin flavored.

Ci is the same as Issac when she is home with us on the weekends she wants the exact same thing for breakfast, blueberry pancakes on Saturday and Sunday. She usually eats two small ones.
